How to Make Chai Tea

  1. Crush 3 green cardamom pods lightly with the side of a knife. In a medium saucepan, combine the crushed cardamom, 1-inch piece of peeled and roughly chopped ginger, 1 cinnamon stick (about 2 inches), 4 whole cloves, and 10 black peppercorns.
  2. Add 4 cups of water to the saucepan and let the spice mixture steep for 30 minutes.
  3. Bring the mixture to a rolling boil over medium-high heat.
  4. Remove from heat and add 6 black tea bags (or 6 teaspoons loose leaf black tea). Let it steep for 10 minutes.
  5. Strain the tea through a fine-mesh sieve, pressing firmly on the spices and tea bags to extract all the flavor. Discard the solids.
  6. Return the strained tea to the saucepan. Add 2 cups of whole milk (or your preferred milk). Bring to a boil over medium heat.
  7. Immediately remove from heat after boiling.
  8. Add honey or sugar to taste (start with 2 tablespoons and adjust). Return to a boil for 1 minute. Remove from heat and let cool for 1 minute. Repeat the boiling and cooling process once more.
