How to Make Chilli Prawn Fry

  1. Deshell, devein, wash, and thoroughly drain 1 pound of prawns.
  2. In a bowl, combine the prawns with 1 tablespoon chilli powder and 1/2 teaspoon salt. Mix well and marinate for 15 minutes.
  3. Heat 2 tablespoons of oil in a wok or large pan over medium heat.
  4. Add 1 teaspoon of mustard seeds and let them spatter.
  5. Add 1 medium onion (finely chopped), 1 tablespoon ginger-garlic paste, and 1/2 teaspoon turmeric powder. Sauté until the onions are golden brown.
  6. Add the marinated prawns to the wok and stir to combine.
  7. Add 1 tablespoon chilli powder and 1/2 teaspoon salt (or to taste). Stir well and cover the wok.
  8. Reduce heat to low and simmer for approximately 15 minutes.
  9. Uncover the wok, stir the prawns, and add 1/2 cup of water (or less if prawns release enough liquid) and 2 tablespoons of chopped coriander leaves. Stir again.
  10. Check the salt content and adjust to taste.
  11. Simmer for another 10 minutes.
  12. Uncover and check if the prawns are cooked through. They should be pink and opaque.
  13. If cooked, increase the heat to medium and stir until all the water evaporates. The sauce should thicken slightly.
  14. Serve hot with rice or chappati.
