How to Make Chilli Prawn Fry
- Deshell, devein, wash, and thoroughly drain 1 pound of prawns.
- In a bowl, combine the prawns with 1 tablespoon chilli powder and 1/2 teaspoon salt. Mix well and marinate for 15 minutes.
- Heat 2 tablespoons of oil in a wok or large pan over medium heat.
- Add 1 teaspoon of mustard seeds and let them spatter.
- Add 1 medium onion (finely chopped), 1 tablespoon ginger-garlic paste, and 1/2 teaspoon turmeric powder. Sauté until the onions are golden brown.
- Add the marinated prawns to the wok and stir to combine.
- Add 1 tablespoon chilli powder and 1/2 teaspoon salt (or to taste). Stir well and cover the wok.
- Reduce heat to low and simmer for approximately 15 minutes.
- Uncover the wok, stir the prawns, and add 1/2 cup of water (or less if prawns release enough liquid) and 2 tablespoons of chopped coriander leaves. Stir again.
- Check the salt content and adjust to taste.
- Simmer for another 10 minutes.
- Uncover and check if the prawns are cooked through. They should be pink and opaque.
- If cooked, increase the heat to medium and stir until all the water evaporates. The sauce should thicken slightly.
- Serve hot with rice or chappati.
