How to Make Chorizo Cheddar Stuffed Portabella Caps

  1. Preheat oven to 375°F (190°C).
  2. Remove stems from 4 large portabella mushroom caps and clean thoroughly with a damp cloth.
  3. Finely chop 1/2 cup of green onions.
  4. In a large bowl, combine 6 ounces of cooked chorizo sausage (removed from casings), 1/2 cup of finely chopped green onions, 1 cup of shredded sharp cheddar cheese, and 1 tablespoon of olive oil. Season generously with 1/2 teaspoon of chili powder, 1/4 teaspoon of cumin, and salt and pepper to taste. Mix well.
  5. Spoon the chorizo mixture evenly into the portabella mushroom caps.
  6. Pour 1/4 cup of dry red wine into the bottom of a greased baking dish.
  7. Place the stuffed mushrooms in the baking dish.
  8. Bake for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving (optional).
