How to Make Chorizo Mushrooms
- Heat a large nonstick frying pan over medium heat. Add 1/2 pound chorizo sausage, sliced into 1/4-inch thick rounds. Cook, turning occasionally, for 5 minutes, or until golden brown and slightly crispy.
- Add 8 ounces cremini mushrooms, sliced, to the pan. Cook, stirring occasionally, for 5 minutes, or until softened and lightly browned.
- Stir in 1 teaspoon fresh rosemary, finely chopped, and 1/2 teaspoon fresh thyme, finely chopped. Toss to combine and cook for another minute until fragrant.
- Transfer the chorizo and mushroom mixture to a warm serving bowl and serve immediately. Garnish with fresh parsley (optional).
