How to Make Bacon Lettuce Tomato Layered Salad
- In a blender, combine 2 tablespoons reserved bacon drippings, 1/2 cup mayonnaise, 1/4 cup sour cream, 2 tablespoons white wine vinegar, 1 clove minced garlic, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 tablespoon sugar, and 1/4 cup basil pesto. Blend until smooth and creamy. Set aside.
- Layer 5 cups chopped romaine lettuce, 2 large sliced tomatoes, and 1/2 cup thinly sliced red onion in a 9x13 inch aluminum pan.
- Spread the mayonnaise mixture evenly over the tomato layer. Top with 6 slices cooked bacon, crumbled.
- Cover the pan and chill in the refrigerator for at least 2 hours to allow the flavors to meld.
- Just before serving, sprinkle with 1/2 cup croutons.
