How to Make Cornmeal Mush
- In a medium saucepan, bring 2 cups of water to a boil.
- In a separate bowl, whisk together the cornmeal and 1/2 cup of cold water until smooth to prevent lumps.
- Gradually whisk the cornmeal mixture into the boiling water, stirring constantly.
- Reduce heat to low and simmer for 20-25 minutes, stirring frequently, until the mush thickens considerably and pulls away from the sides of the pan. Add the remaining 1 1/2 cups of water gradually if it becomes too thick.
- Remove from heat and pour the cornmeal mush into a greased 8x8 inch baking dish or a similar sized bowl.
- Cover with plastic wrap and refrigerate overnight to set.
- Once set, gently unmold the cornmeal mush onto a cutting board.
- Cut into 1/4-inch thick slices.
- Heat butter or margarine in a lightly oiled griddle or frying pan over medium heat.
- Fry the cornmeal mush slices for 2-3 minutes per side, or until golden brown and slightly crisp.
- Serve warm with your favorite fruit jam.
