How to Make Cottage Cheese Rolls
- Preheat oven to 350°F (175°C).
- In a large bowl, combine 16 ounces (450g) of cottage cheese, 1/2 cup (113g) softened margarine, 2 1/2 cups (300g) all-purpose flour, and 1/2 teaspoon salt.
- Mix until a dough forms. If too sticky, add a tablespoon or two of extra flour, one at a time.
- Form the dough into a ball, wrap tightly in plastic wrap, and chill in the refrigerator overnight.
- Divide the chilled dough into 4 equal portions.
- On a lightly floured surface, roll out one portion of dough at a time into a 12-inch circle.
- Cut each circle into 12 equal wedges.
- Starting at the wide end, roll each wedge up tightly into a croissant shape.
- Place rolls on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until golden brown.
- While the rolls are baking, prepare the icing (see below).
- Once baked, let the rolls cool slightly before frosting.
- Frost generously with the cinnamon icing.
- Serve warm and enjoy! These are also delicious frozen – simply bake from frozen for a few minutes longer.
