How to Make Cottage Cheese Rolls

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine 16 ounces (450g) of cottage cheese, 1/2 cup (113g) softened margarine, 2 1/2 cups (300g) all-purpose flour, and 1/2 teaspoon salt.
  3. Mix until a dough forms. If too sticky, add a tablespoon or two of extra flour, one at a time.
  4. Form the dough into a ball, wrap tightly in plastic wrap, and chill in the refrigerator overnight.
  5. Divide the chilled dough into 4 equal portions.
  6. On a lightly floured surface, roll out one portion of dough at a time into a 12-inch circle.
  7. Cut each circle into 12 equal wedges.
  8. Starting at the wide end, roll each wedge up tightly into a croissant shape.
  9. Place rolls on a baking sheet lined with parchment paper.
  10. Bake for 20-25 minutes, or until golden brown.
  11. While the rolls are baking, prepare the icing (see below).
  12. Once baked, let the rolls cool slightly before frosting.
  13. Frost generously with the cinnamon icing.
  14. Serve warm and enjoy! These are also delicious frozen – simply bake from frozen for a few minutes longer.
