How to Make Cowboy Supper

  1. Brown 1 lb ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. While the beef browns, peel and thinly slice 2 lbs russet potatoes.
  3. Grease a 2-quart casserole dish. Layer half of the sliced potatoes in the bottom of the dish.
  4. Arrange 1 medium onion, thinly sliced into rings, over the potatoes.
  5. Top the onions with the browned hamburger, followed by 1 (15-ounce) can of kidney beans (drained and rinsed).
  6. Spread 1 (10.75-ounce) can of condensed cream of mushroom soup evenly over the beans.
  7. Cover the casserole dish with foil.
  8. Bake in a preheated oven at 350°F (175°C) for 75 minutes.
  9. Remove the foil. Sprinkle 1/2 cup bacon bits and 1 cup shredded cheddar cheese over the top.
  10. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
