How to Make Aquavit S Quick Pickled Cucumbers
- If using regular cucumbers, slice them in half lengthwise and scoop out the seeds. If using pickling cucumbers, skip this step.
- Thinly slice the cucumbers using a mandoline slicer or sharp knife. Aim for slices as thin as possible (about 1/8 inch thick).
- Place the sliced cucumbers in a colander and generously sprinkle with 2 teaspoons of kosher salt. Toss gently to distribute the salt.
