How to Make Eggplant Parmesan With Goat Cheese Sandwich

  1. Preheat grill to medium heat. Brush both sides of eggplant slices with 1 tablespoon olive oil and sprinkle with salt.
  2. Grill eggplant slices for 4-5 minutes per side, or until tender and slightly browned.
  3. Spread 1 1/2 teaspoons of tomato paste on each slice of bread.
  4. Spread 2 slices of bread with softened goat cheese. Top with grilled eggplant slices.
  5. Top the eggplant with the remaining bread slices, tomato paste side down.
  6. Brush the outside of each sandwich with the remaining 1 tablespoon olive oil. Sprinkle 1 tablespoon grated Parmesan cheese evenly over the outside of both sandwiches.
  7. Heat a large nonstick skillet over medium-low heat. Add 1 tablespoon olive oil to the skillet.
  8. Carefully place sandwiches in the skillet and cook for 4-5 minutes per side, or until the Parmesan cheese is golden brown and the bread is crispy.
  9. Remove from skillet, let cool slightly, and serve hot. Enjoy!
