How to Make Ev's Vasilopita

  1. Wash and wrap one coin in aluminum foil.
  2. Preheat oven to 350°F (175°C).
  3. Generously butter and flour a 12-inch round cake pan or springform pan.
  4. In a large bowl, cream together 1 cup (2 sticks) unsalted butter and ¾ cup granulated sugar until light and fluffy (about 4-5 minutes).
  5. Beat in 1 teaspoon vanilla extract, 2 teaspoons baking powder, ½ teaspoon salt, and 2 tablespoons cognac.
  6. Beat in 4 large eggs, one at a time, until fully incorporated.
  7. Gradually beat in 3 cups all-purpose flour on low speed, one cup at a time, until just combined.
  8. Add 1 cup buttermilk and ½ cup orange juice alternately with the remaining 1 cup flour, beginning and ending with the flour. Mix until just combined. Do not overmix.
  9. Gently fold in 1 cup chopped walnuts or pecans.
  10. Carefully drop the foil-wrapped coin into the batter. Pour batter into the prepared pan.
  11. Bake for 1 hour and 30 minutes to 1 hour and 45 minutes, or until a wooden skewer inserted into the center comes out clean. Loosely cover the cake with foil if it browns too quickly.
  12. Let the cake cool in the pan for 30 minutes before inverting it onto a wire rack to cool completely.
  13. Once completely cool, transfer the Vasilopita to your prettiest platter.
  14. Dust with powdered sugar to resemble snow.
  15. Decorate with festive sprinkles, pine cones, red and gold ribbons, or other embellishments.
  16. Serve and enjoy! Hronia Polla! (Many years!)
