How to Make Basic French Silk Pie
- Melt 6 ounces of semi-sweet chocolate in a double boiler set over simmering water, stirring occasionally until smooth.
- Remove from heat and set aside to cool until thickened but still pourable.
- In a separate heat-safe bowl, whisk together 3 large eggs and ¾ cup granulated sugar until light and frothy.
- Place the bowl over a simmering double boiler (or use a bain-marie) and cook, whisking constantly, until the mixture is warm and slightly thickened (about 1-2 minutes). Do not let it scramble.
- Remove from heat. Using a stand mixer or hand mixer, beat the cooled melted chocolate into the warm egg mixture until well combined.
- Add ½ cup (1 stick) unsalted butter, softened, and beat for a full 15 minutes until the mixture is incredibly smooth and silky.
- Beat in 1 teaspoon vanilla extract and 1 tablespoon of your favorite liqueur (optional).
- Pour the filling into your prepared pie crust (9-inch).
