How to Make Finnish Jaakkos Dream Torte Jaakon Unelmakaaretorttu Cake Rol

  1. Preheat oven to 190°C (375°F). Line a 38 x 25cm (15 x 10-inch) jelly roll pan with parchment paper, buttering the bottom and sides.
  2. Lightly dust the pan with flour, tapping out any excess.
  3. In a large bowl, beat 4 large eggs until light and foamy.
  4. Gradually add 150g granulated sugar, beating until light and lemon-colored (about 5 minutes on high speed).
  5. In a separate bowl, whisk together 100g cake flour and 1 tsp baking powder.
  6. Gently fold the dry ingredients into the egg mixture using a rubber spatula until just combined.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 8-10 minutes, or until the top springs back when lightly touched.
  9. While the cake bakes, prepare a doubled length of paper towel (approximately 45cm), dusting it generously with powdered sugar.
  10. Once baked, immediately invert the cake onto the sugared towel. Carefully peel off the parchment paper.
  11. Starting from a narrow end, tightly roll the cake and towel together.
  12. Let the cake cool completely.
  13. For the filling: In a bowl, beat 250g ricotta cheese (or rahka) and 200ml heavy whipping cream until stiff peaks form.
  14. Gradually add 50g powdered sugar and 1 tsp vanilla extract, beating until smooth.
  15. Carefully unroll the cooled cake.
  16. Spread the creamy mixture evenly over the cake, leaving a 1cm border.
  17. Top with 200g fresh berries (strawberries, raspberries, blueberries etc).
  18. Roll the cake up tightly again.
  19. Place the cake on a serving plate, cover, and chill for at least 30 minutes before serving.
  20. Serves 6-8
