Ingredients for Fried Tofu And Spinach Salad

  • Extra Firm Tofu
  • Tamari Soy Sauce
  • Rice Vinegar
  • Fresh Ginger
  • 1 tablespoon sugar
  • Dijon Style Mustard
  • 1/2 teaspoon salt
  • Cooking Oil
  • 1/4 cup cornmeal
  • 2 tablespoons sesame seeds
  • 5 oz fresh spinach, washed and roughly chopped
  • 2 oz watercress, trimmed and roughly chopped
  • Button Mushrooms
  • Cherry Tomatoes
  • 1/4 cup thinly sliced red onion

How to Make Fried Tofu And Spinach Salad

  1. Press the tofu to remove excess water. Cut into eight 1/2-inch thick slices.
  2. In a shallow dish, arrange tofu slices in a single layer and pour tamari sauce over them. Turn to coat and let stand for 15 minutes.
  3. Meanwhile, prepare the vinaigrette: In a blender, combine rice vinegar, grated ginger, sugar, Dijon mustard, and salt. Blend until smooth.
  4. With the blender running, slowly drizzle in the vegetable oil until emulsified.
  5. In a separate shallow dish, combine cornmeal and sesame seeds.
  6. Drain the tofu, discarding the tamari sauce. Dip each tofu slice into the cornmeal mixture, coating both sides.
  7. Heat 2 teaspoons of vegetable oil in a large nonstick skillet over medium-high heat.
  8. Add the tofu slices to the skillet and cook for 5-6 minutes per side, or until golden brown and crispy.
  9. In a large bowl, combine the spinach, watercress, mushrooms, tomatoes, and red onion.
  10. Pour the vinaigrette over the salad and toss gently to coat.
  11. Divide the salad among four dinner plates.
  12. Cut each tofu slice in half diagonally and arrange on top of the salad.
  13. Sprinkle with additional sesame seeds, if desired. Serve immediately.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
