- Line two large jelly-roll pans with parchment paper.
- Place 24 half-strips of bacon (from about 12 slices) on the prepared pans in a single layer.
- Bake for 5-7 minutes, or until the bacon has rendered some fat and is starting to brown at the edges but remains pliable.
- Remove from oven and drain on paper towels. Pat to remove excess grease.
- Using a 24-cup non-stick mini muffin pan, line the bottom and sides of each cup with a par-cooked bacon half-strip, creating a well in the center. Adjust bacon as needed to fit.
- In a large mixing bowl, beat 2 pounds of cooked and mashed potatoes, 2 large eggs, 1/2 cup shredded sharp cheddar cheese, and 2 tablespoons chopped fresh chives with an electric mixer on medium-high speed until smooth and fluffy.
