How to Make Golden Syrup

  1. Add 1 cup of granulated sugar to a small, heavy-bottomed saucepan. Gently swirl the pan to distribute the sugar evenly.
  2. Sprinkle 1 tablespoon of white vinegar and 1/4 cup of water over the sugar.
  3. Cook over low heat for 5 minutes, resisting the urge to stir. The sugar will begin to melt.
  4. Increase the heat to medium and continue cooking, without stirring, until the mixture turns a light amber caramel color (approximately 5-6 minutes). Watch carefully to prevent burning!
  5. Immediately remove the pan from the heat and carefully pour in 1/2 cup of light corn syrup.
  6. Do not stir. Allow the mixture to bubble gently for 2-3 minutes.
  7. Once the bubbling subsides, stir the golden syrup thoroughly until smooth and combined.
  8. Pour the golden syrup into a clean, airtight container.
  9. Store at room temperature for up to several months. Enjoy!
