Ingredients for Green Pea Timbales
- 3 large eggs
- 1/2 cup milk
- Salt
- Pepper
- Parsley
- Green Peas
- Onion
How to Make Green Pea Timbales
- Preheat oven to 300°F (150°C). Grease six timbale molds or muffin cups.
- In a medium bowl, lightly beat the 3 large eggs with a fork until yolks and whites are just combined.
- In a small bowl, whisk together the 1/2 cup milk, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and a pinch of nutmeg.
- Add the milk mixture to the beaten eggs. Stir in the 1 cup thawed frozen peas, 1 tablespoon melted butter, 2 tablespoons grated Parmesan cheese, and 1 tablespoon chopped fresh mint (if using).
- Gently stir until all ingredients are well combined.
- Divide the mixture evenly among the prepared timbale molds or muffin cups.
- Place the molds in a larger baking pan and carefully pour enough hot water into the pan to come halfway up the sides of the molds (this creates a bain-marie for even cooking).
- Bake for 30-40 minutes, or until the timbales are set and a toothpick inserted into the center comes out clean.
- Let the timbales cool slightly in the molds before inverting them onto serving plates.
- Serve immediately, garnished with 1/2 cup tomato sauce, 1/2 cup cooked sweet corn kernels, and 1/4 cup finely diced red bell pepper.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
