How to Make Haupia Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes are cooling, prepare the haupia filling (see separate recipe).
  9. Once the cakes and haupia are completely cool, frost the top of one cake layer with a generous amount of haupia filling.
  10. Carefully place the second cake layer on top and frost the entire cake with remaining haupia or your favorite frosting.
  11. Refrigerate for at least 2 hours before serving to allow the flavors to meld and the cake to set.
