How to Make Herbal Ginger Brew

  1. Combine 2 cups of water and 1 cup thinly sliced fresh ginger in a medium saucepan.
  2. Bring to a simmer over medium heat and cook for 30 minutes, or until the ginger is very tender.
  3. Remove from heat and let cool slightly.
  4. Strain the mixture through a fine-mesh sieve or cheesecloth, pressing on the solids to extract as much liquid as possible.
  5. Return the strained ginger liquid to the saucepan. Stir in 1 cup of maple syrup until completely dissolved.
  6. Let the syrup cool completely before transferring it to an airtight container. Refrigerate for at least 2 hours before serving (or up to 6 months).
  7. To serve: Add 2 tablespoons of ginger syrup to a glass filled with 8 ounces of chilled carbonated water.
  8. Add the juice of 1/2 a lemon and a lemon peel twist for extra zing!
