How to Make Home Fries With Onions And Chives

  1. Peel and quarter 2 pounds of Yukon Gold potatoes lengthwise. Cut crosswise into 1/2-inch thick pieces.
  2. Place potatoes in a large pot and cover with cold water by 1 inch. Add 1 teaspoon of salt. Bring to a boil, then reduce heat and simmer until tender when pierced with a knife (about 20 minutes).
  3. Drain potatoes and rinse under cold water to stop the cooking process. Let cool completely.
  4. While potatoes cool, thinly slice 1 large yellow onion.
  5. In a 12-inch nonstick skillet, melt 1 tablespoon of butter over moderately low heat. Add sliced onions, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Cook, stirring occasionally, until pale golden and caramelized (10-15 minutes). Transfer onions to a bowl and set aside.
  6. In the same skillet, heat 1 tablespoon butter and 1 tablespoon olive oil over moderately high heat until the foam subsides.
  7. Add half of the potatoes to the skillet along with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Sauté, stirring occasionally, until golden brown and crispy (8-12 minutes).
  8. Add half of the caramelized onions to the skillet and continue to sauté for another 3 minutes, until the potatoes are evenly browned and the onions are heated through.
  9. Transfer the cooked potatoes and onions to a bowl and cover to keep warm.
  10. Repeat steps 7-9 with the remaining potatoes and onions.
  11. Return all the cooked potatoes and onions to the skillet. Stir in 1 tablespoon of butter and 2 tablespoons of chopped fresh chives. Toss gently until the butter is melted and the chives are wilted.
  12. Season with salt and pepper to taste. Serve immediately and enjoy!
