  • 1 tablespoon butter (for greasing the dish) + 2 tablespoons butter (melted, for the potatoes)
  • Russet Potatoes
  • Whole Milk
  • Mozzarella Cheese
  • Parmesan Cheese
  • Salt & Fresh Ground Pepper
  • Plain Breadcrumbs

How to Make Baked Parmesan Mashed Potatoes

  1. Preheat oven to 400°F (200°C).
  2. Grease a 9x13 inch baking dish with 1 tablespoon of butter.
  3. Peel and chop 2 lbs russet potatoes into 1-inch pieces. Place in a large pot and cover with cold water. Add 1 teaspoon salt.
  4. Bring to a boil and cook for 15-20 minutes, or until potatoes are easily pierced with a fork.
  5. Drain the potatoes thoroughly and return them to the pot.
  6. Mash the potatoes until smooth. Add 1/2 cup milk and 2 tablespoons melted butter; mix until well combined.
  7. Stir in 1 1/2 cups shredded mozzarella cheese and 3/4 cup grated Parmesan cheese.
  8. Season with salt and pepper to taste.
  9. In a separate bowl, combine 1/2 cup breadcrumbs and 1/4 cup grated Parmesan cheese.
