How to Make Baked Parmesan Mashed Potatoes
- Preheat oven to 400°F (200°C).
- Grease a 9x13 inch baking dish with 1 tablespoon of butter.
- Peel and chop 2 lbs russet potatoes into 1-inch pieces. Place in a large pot and cover with cold water. Add 1 teaspoon salt.
- Bring to a boil and cook for 15-20 minutes, or until potatoes are easily pierced with a fork.
- Drain the potatoes thoroughly and return them to the pot.
- Mash the potatoes until smooth. Add 1/2 cup milk and 2 tablespoons melted butter; mix until well combined.
- Stir in 1 1/2 cups shredded mozzarella cheese and 3/4 cup grated Parmesan cheese.
- Season with salt and pepper to taste.
- In a separate bowl, combine 1/2 cup breadcrumbs and 1/4 cup grated Parmesan cheese.
- Transfer the mashed potato mixture to the prepared baking dish. Sprinkle evenly with the breadcrumb and Parmesan mixture.
- Bake uncovered for 20-25 minutes, or until the topping is golden brown and bubbly.
