How to Make Honey And Cheese Rolls

  1. Preheat your oven to 160-170°C (320-340°F).
  2. In a medium bowl, gently combine the crumbled feta, anthotiro, honey, egg yolk, and cinnamon until a thick, smooth mixture is formed.
  3. Unroll the filo pastry and carefully cut it into 12cm wide strips.
  4. Brush each filo strip generously with melted butter.
  5. Place a spoonful of the cheese mixture at the bottom edge of each filo strip.
  6. Tightly roll each strip from the bottom up, like a cigar.
  7. Place the rolls seam-down on a baking sheet lined with parchment paper.
  8. Brush the tops of the rolls with remaining melted butter.
  9. Bake for 20 minutes, or until the rolls are golden brown and crispy.
  10. Let the rolls cool slightly before drizzling with extra honey and sprinkling with chopped nuts (if using). Serve warm and enjoy!
