How to Make Horchata

  1. Rinse 1 cup of white rice under cold water until the water runs clear.
  2. In a spice grinder, finely grind the rinsed rice.
  3. In a large bowl, combine the ground rice, 1/2 cup blanched almonds, and 2 cinnamon sticks.
  4. Add 3 1/2 cups of water to the bowl, stir well, cover, and refrigerate overnight (or for at least 6 hours).
  5. Blend the rice mixture until completely smooth using a high-speed blender. This may require stopping and scraping down the sides a few times.
  6. Add 2 1/2 cups of water to the blender and blend again until well combined.
  7. Add 1 cup of granulated sugar (or to taste) and 1 teaspoon of vanilla extract. Blend briefly to combine.
  8. Strain the horchata through a fine-mesh sieve or cheesecloth lined strainer into a large bowl. This removes any remaining rice particles for a smoother texture.
  9. Add up to 2 cups of additional water to adjust the consistency to your liking. It should be milky but not thick.
  10. Refrigerate for at least 30 minutes before serving. Serve chilled over ice and garnish with a cinnamon stick if desired.
