How to Make Hot Sauce By Barb

  1. Wash and stem the hot peppers. Roughly chop them.
  2. In a medium saucepan, combine the chopped peppers, horseradish, minced garlic, and vinegar. Bring to a simmer over medium heat.
  3. Reduce heat to low and simmer for 20 minutes, or until the peppers are very tender.
  4. Carefully transfer the pepper mixture to a blender. Add the salt and sugar.
  5. Blend until completely smooth and pureed. If the sauce is too thick, add more vinegar, 1 tablespoon at a time, until desired consistency is reached.

  7. Pour the hot sauce into hot, sterilized jars, leaving ½ inch of headspace at the top of each jar.
  8. Run a clean, sterilized knife or spatula around the inside of each jar to release any air bubbles.
  9. Wipe the rims of the jars clean.
  10. Seal the jars with sterilized lids and rings. Process in a boiling water bath for 10 minutes for safe shelf storage (optional, but recommended for longer storage).
  11. Allow to cool completely. Store in a cool, dark place (if processed) or refrigerate (if not processed).
