How to Make Lacy Wafers
- In a medium saucepan, combine 1 cup light corn syrup, 1 cup vegetable shortening, and 1 cup granulated sugar.
- Stir constantly over medium heat until the mixture comes to a gentle boil and the sugar is fully dissolved.
- Remove from heat and stir in 1 cup all-purpose flour and 1/2 cup chopped pecans or walnuts (optional). The mixture will be thick.
- Grease two baking sheets. Drop rounded teaspoons of the mixture onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake 4-6 cookies at a time at 375°F (190°C) for 8-10 minutes, or until the edges are lightly browned.
- Remove from oven and let cool for 30 seconds.
- While still warm, gently roll each cookie into a cigar shape. If the cookies become too hard to roll, return them to the oven for a few seconds to soften.
- Let the cookies cool completely.
- Once cool, dip the ends of the cookies into melted semi-sweet chocolate chips and then into sprinkles.
- Allow the chocolate to set completely.
- Store in an airtight container at room temperature for up to several weeks.
