How to Make Lambswool

  1. Preheat oven to 180°C (350°F, Gas Mark 4).
  2. Core 6-8 medium apples (about 2 lbs total) and place them in a baking dish. Bake for 40-45 minutes, or until very soft and easily pierced with a fork.
  3. Remove apples from oven and let cool slightly. Once cool enough to handle, squeeze the pulp from the skins through a fine-mesh sieve or use a potato ricer to remove the pulp and discard the skins. Fluff the puree with a fork.
  4. In a saucepan, gently heat 1 pint (570ml) of ale and 1 pint (570ml) of cider along with 1 cinnamon stick and 4 whole cloves. Simmer for 5 minutes.
  5. Stir in the apple puree and add sugar to taste (start with 1/4 cup, adding more to your preference).
  6. Serve immediately. Garnish with a sprinkle of cinnamon or a slice of apple, if desired.
