How to Make Mango Lime Syrup
- Pulse 2 cups of peeled and chopped mangoes in a food processor until finely chopped.
- In a heavy medium saucepan, combine the chopped mangoes, 1 cup of sugar, and 1/2 cup of water. Bring to a boil over medium heat, stirring constantly until the sugar is completely dissolved.
- Reduce heat to low, cover, and simmer for 30 minutes, or until the mangoes are very soft and easily mashed. Stir occasionally.
- Remove from heat and stir in 1/4 cup of fresh lime juice.
- Strain the mixture through a fine-mesh sieve into a bowl, using the back of a spoon to press on the solids and extract as much syrup as possible. Discard the solids.
- Let the syrup cool completely to room temperature, then cover and refrigerate for at least 2 hours to allow the flavors to meld. Enjoy!
