How to Make Mango Lime Syrup

  1. Pulse 2 cups of peeled and chopped mangoes in a food processor until finely chopped.
  2. In a heavy medium saucepan, combine the chopped mangoes, 1 cup of sugar, and 1/2 cup of water. Bring to a boil over medium heat, stirring constantly until the sugar is completely dissolved.
  3. Reduce heat to low, cover, and simmer for 30 minutes, or until the mangoes are very soft and easily mashed. Stir occasionally.
  4. Remove from heat and stir in 1/4 cup of fresh lime juice.
  5. Strain the mixture through a fine-mesh sieve into a bowl, using the back of a spoon to press on the solids and extract as much syrup as possible. Discard the solids.
  6. Let the syrup cool completely to room temperature, then cover and refrigerate for at least 2 hours to allow the flavors to meld. Enjoy!
