How to Make Mashed Potato Cheese Dogs

  1. Preheat oven to 375°F (190°C).
  2. Place potatoes in a large pot and cover with cold water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until fork-tender.
  3. Drain potatoes well. Return them to the pot and cook over low heat for 1-2 minutes to evaporate excess moisture.
  4. While potatoes are cooking, heat milk in the microwave for 1 minute.
  5. Add butter to the potatoes and mash until smooth and creamy. Gradually stir in the warm milk until desired consistency is reached.
  6. Season with salt and pepper to taste.
  7. Make a lengthwise cut in each hot dog, about ¾ of the way through, leaving the bottom intact so it can open like a book.
  8. Lay hot dogs on a baking sheet, cut-side up.
  9. Spoon a generous amount of mashed potatoes down the center of each hot dog.
  10. Top each with two halves of an American cheese slice.
  11. Bake for 12-15 minutes, or until cheese is melted and lightly browned.
  12. Serve immediately and enjoy!
