How to Make Mini Apple Pies
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, combine 1/2 cup granulated sugar, 1/4 cup packed light brown sugar, 2 tablespoons all-purpose flour, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg. Add 4 cups peeled and thinly sliced apples (about 4 medium apples) and toss gently to coat.
- On a lightly floured surface, unroll pie crusts. Using a 3-inch biscuit cutter (or a coffee mug!), cut out circles. Re-roll scraps and cut out more circles until all the crust is used.
- In a small bowl, beat 1 large egg with 1 teaspoon of water. Brush each circle with the egg wash.
- Place a spoonful of the apple mixture onto half of the circles. Top each with a plain circle, pressing the edges firmly to seal. Cut several small slits in the top crust to allow steam to escape. Sprinkle with 1 tablespoon of granulated sugar.
- Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
