How to Make Mixed Up Popcorn
- Preheat oven to 250°F (120°C).
- In a large bowl, combine 10 cups popped popcorn, 2 cups Chex cereal (or similar), 1 cup salted peanuts, and 1 cup pecan halves.
- In a heavy 2-3 quart saucepan, combine 1 cup packed brown sugar, 1/2 cup butter, and 1/4 cup light corn syrup.
- Cook over medium heat, stirring constantly, until the mixture comes to a rolling boil.
- Boil for exactly 5 minutes without stirring.
- Remove from heat and immediately stir in 1 teaspoon vanilla extract and 1 teaspoon baking soda. The mixture will foam up.
- Pour the hot sugar mixture evenly over the popcorn mixture in the large bowl.
- Gently stir to coat all the popcorn, cereal, and nuts completely.
- Transfer the mixture to a large greased baking sheet or roasting pan.
- Bake for 1 hour, stirring halfway through to ensure even baking and browning.
- Remove from oven and let cool completely on waxed paper.
- Once completely cool, add your favorite M&Ms and/or pretzel sticks.
- Store in an airtight container at room temperature for up to a week (if it lasts that long!).
- Enjoy!
