How to Make Monkey Munch Treat From Jon Kate 8

  1. Preheat your oven to 350°F (175°C).
  2. Line a 10x15 inch jellyroll pan with parchment paper, leaving some overhang on the sides to easily lift the finished treat.
  3. In a large bowl, combine the toasted oat cereal, rice cereal, peanuts, and chocolate chips. Mix well to distribute evenly.
  4. In a medium saucepan over medium heat, combine the corn syrup and sugar. Stir constantly until the sugar dissolves completely and the mixture comes to a rolling boil.
  5. Remove from heat and immediately stir in the peanut butter and vanilla extract until smooth and well combined.
  6. Pour the hot peanut butter mixture over the cereal mixture. Stir vigorously until all the cereal is evenly coated.
  7. Quickly pour the mixture into the prepared jellyroll pan and press firmly and evenly into the pan using a spatula or wax paper.
  8. Let the Monkey Munch cool completely at room temperature until firm (at least 1-2 hours).
  9. Once completely set, lift the treat out of the pan using the parchment paper overhang. Cut into bars and serve. Enjoy!
