How to Make Ninfa's Flan
- Preheat oven to 350°F (175°C).
- In a blender, combine the condensed milk, evaporated milk, eggs, vanilla extract, and cream of tartar. Blend until completely smooth and frothy.
- Pour the mixture through a fine-mesh sieve into a large bowl to remove any lumps.
- Carefully pour the flan mixture into your prepared caramel-lined ramekins or baking dish.
- Place the ramekins in a larger baking pan. Pour enough hot water into the baking pan to come halfway up the sides of the ramekins (bain-marie).
