How to Make Not So Sinful Brownies

  1. Preheat oven to 350°F (175°C). Lightly grease the bottom of a 13 x 9 inch baking pan with cooking spray.
  2. In a medium saucepan, melt 1/2 cup (113g) of semi-sweet chocolate chips and 1/4 cup (60ml) vegetable oil over low heat, stirring frequently until smooth and melted. Remove from heat.
  3. Stir in 1 cup (200g) granulated sugar and 1/2 cup (120ml) unsweetened applesauce until the sugar is completely dissolved.
  4. Beat in 2 large egg whites and 1 teaspoon vanilla extract until well combined.
  5. In a separate bowl, whisk together 1 1/2 cups (190g) rolled oats, 1/2 cup (60g) all-purpose flour, 1 teaspoon baking powder, and 1/4 teaspoon salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. The edges should be set and pulling away from the sides of the pan.
  9. Let the brownies cool completely in the pan on a wire rack before cutting.
  10. Cut into bars and store tightly covered at room temperature.
  11. Dust with powdered sugar just before serving for an extra touch of sweetness.
