How to Make Old Fashioned Lemon Bread
- Grease and flour a 4 1/2 x 8 1/2-inch loaf pan.
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together 2 cups all-purpose flour, 1 1/2 cups granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
- In a separate bowl, whisk together 2 large eggs, 1/2 cup milk, 1/4 cup vegetable oil, and the zest of 2 lemons.
- Gently pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- While the bread is baking, prepare the lemon glaze (see step 13).
- As soon as the bread comes out of the oven, use a long wooden skewer or toothpick to poke numerous holes all the way through the hot bread.
- Immediately and slowly drizzle the hot lemon glaze over the hot bread, allowing it to soak in completely.
- Let the bread cool in the pan on a wire rack for 15 minutes.
- Remove the bread from the pan and let it cool completely on the wire rack.
- **Lemon Glaze:** In a small saucepan, combine 1/2 cup lemon juice and 1 cup powdered sugar. Stir over medium heat until the sugar is completely dissolved and the glaze is smooth.
