How to Make Old Fashioned Lemon Bread

  1. Grease and flour a 4 1/2 x 8 1/2-inch loaf pan.
  2. Preheat oven to 350°F (175°C).
  3. In a large bowl, whisk together 2 cups all-purpose flour, 1 1/2 cups granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
  4. In a separate bowl, whisk together 2 large eggs, 1/2 cup milk, 1/4 cup vegetable oil, and the zest of 2 lemons.
  5. Gently pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Pour batter into the prepared loaf pan and spread evenly.
  7. Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. While the bread is baking, prepare the lemon glaze (see step 13).
  9. As soon as the bread comes out of the oven, use a long wooden skewer or toothpick to poke numerous holes all the way through the hot bread.
  10. Immediately and slowly drizzle the hot lemon glaze over the hot bread, allowing it to soak in completely.
  11. Let the bread cool in the pan on a wire rack for 15 minutes.
  12. Remove the bread from the pan and let it cool completely on the wire rack.
  13. **Lemon Glaze:** In a small saucepan, combine 1/2 cup lemon juice and 1 cup powdered sugar. Stir over medium heat until the sugar is completely dissolved and the glaze is smooth.
