How to Make Orange Grapefruit Marmalade

  1. Wash oranges and grapefruits thoroughly. Remove the peels from 3 large oranges and 2 large grapefruits. Using a sharp knife or vegetable peeler, remove as much of the white pith as possible.
  2. Cut the peels into thin strips (about 1/8 inch wide).
  3. In a medium saucepan, combine the peel strips, 1 teaspoon of baking soda, and 1 1/2 cups of water. Bring to a boil, cover, and simmer for 20 minutes.
  4. Meanwhile, remove the white membrane from the oranges and grapefruits, and segment the fruit, reserving the juice in a bowl.
  5. Discard any seeds.
  6. In an 8-10 quart Dutch oven, combine the fruit segments, reserved juice, and the undrained cooked peel.
  7. Cover and simmer for 10 minutes.
  8. Measure 3 cups of the cooked fruit mixture.
  9. Add 7 cups of granulated sugar and stir well until dissolved.
  10. Bring to a full rolling boil that cannot be stirred down, and boil uncovered for 1 minute.
  11. Remove from heat, stir in 1 pouch (1.75 oz) of liquid pectin, and skim off any foam with a metal spoon.
  12. Stir and skim the foam for 10 minutes.
  13. Ladle the hot marmalade into sterilized jars, leaving 1/4 inch headspace. Wipe the rims clean, and seal with lids and rings.
  14. Process in a boiling water bath for 10 minutes (adjust processing time based on your altitude).
