How to Make Orange Grapefruit Marmalade
- Wash oranges and grapefruits thoroughly. Remove the peels from 3 large oranges and 2 large grapefruits. Using a sharp knife or vegetable peeler, remove as much of the white pith as possible.
- Cut the peels into thin strips (about 1/8 inch wide).
- In a medium saucepan, combine the peel strips, 1 teaspoon of baking soda, and 1 1/2 cups of water. Bring to a boil, cover, and simmer for 20 minutes.
- Meanwhile, remove the white membrane from the oranges and grapefruits, and segment the fruit, reserving the juice in a bowl.
- Discard any seeds.
- In an 8-10 quart Dutch oven, combine the fruit segments, reserved juice, and the undrained cooked peel.
- Cover and simmer for 10 minutes.
- Measure 3 cups of the cooked fruit mixture.
- Add 7 cups of granulated sugar and stir well until dissolved.
- Bring to a full rolling boil that cannot be stirred down, and boil uncovered for 1 minute.
- Remove from heat, stir in 1 pouch (1.75 oz) of liquid pectin, and skim off any foam with a metal spoon.
- Stir and skim the foam for 10 minutes.
- Ladle the hot marmalade into sterilized jars, leaving 1/4 inch headspace. Wipe the rims clean, and seal with lids and rings.
- Process in a boiling water bath for 10 minutes (adjust processing time based on your altitude).
