How to Make Pasta In Pink Sauce With Sausage Ragu

  1. Bring a large pot of salted water to a boil. Add 1 pound of pasta (penne, rotini, or your favorite shape) and cook according to package directions until al dente.
  2. While the pasta cooks, heat 2 tablespoons olive oil and 1 tablespoon butter in a large non-stick skillet over medium-high heat. Add 1 pound Italian sausage links (sweet or spicy), casings removed. Brown the sausage, breaking it up with a spoon, for 8-10 minutes.
  3. Remove the cooked sausage from the skillet and set aside.
  4. Add 1 medium onion, chopped, to the skillet and cook until softened and translucent, about 5 minutes.
  5. Stir in 1/2 cup tapenade.
  6. Add 1 cup heavy cream, 1/2 cup grated Parmesan cheese, 1/4 cup grated Pecorino Romano cheese, and 1/4 cup ricotta cheese.
  7. Stir constantly until the cheeses are melted and the sauce is smooth and creamy.
  8. Reduce heat to low and stir in 1 (24 ounce) jar of Ragú® pasta sauce.
  9. Continue to stir until the sauce turns a beautiful pink hue and is well combined.
  10. Add the cooked sausage to the pink sauce and stir to combine.
  11. When the pasta is cooked, drain it and add it to the skillet with the sauce.
  12. Toss to coat the pasta evenly in the sauce.
  13. Serve immediately, garnished with extra Parmesan cheese, if desired.
