How to Make Ragu Shuka Ragu

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Add diced onion and cook, stirring occasionally, until translucent, about 5 minutes.
  4. Add minced garlic and cook for 1 minute, stirring constantly.
  5. Stir in smoked paprika, cumin, and cayenne pepper (if using) for 30 seconds.
  6. Add drained and rinsed garbanzo beans and stir to combine.
  7. Pour in Ragu sauce and bring to a simmer. Cook for 3-4 minutes, stirring occasionally.
  8. Stir in 1/2 cup of crumbled feta cheese.
  9. Gently crack 4 eggs into the sauce, one in each corner of the pan, being careful not to break the yolks.
  10. If using, gently push shrimp into the tomato sauce mixture, avoiding the egg yolks.
  11. Place the skillet in the preheated oven and bake for approximately 20 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  12. Remove from oven. Sprinkle the remaining 1 tablespoon of crumbled feta cheese over the top.
  13. Season with smoked paprika, salt, and pepper to taste.
