How to Make Pasteli
- In a heavy-bottomed saucepan over medium heat, combine the sugar, honey, and water. Stir constantly until the sugar dissolves completely.
- Continue to cook the mixture, without stirring, until it reaches the soft-crack stage (approximately 270-285°F or 132-140°C). If you don't have a candy thermometer, watch carefully for the mixture to turn a light amber color and thicken. A small amount dropped into cold water should form a hard, brittle thread.
- Remove the saucepan from the heat and carefully stir in the sesame seeds until evenly distributed. Be careful as the mixture will be very hot.
- Immediately pour the mixture onto a parchment-lined baking sheet or silicone mat. Spread it evenly to a desired thickness (about 1/2 inch).
- Let the Pasteli cool completely. This process takes approximately 30-45 minutes. Do not disturb it while cooling.
