How to Make Peach Conserve With Rum

  1. Combine 1 cup finely chopped orange peel and pulp with 1/2 cup water in a small saucepan. Bring to a simmer and cook until the peel is tender, about 10-15 minutes.
  2. Set the cooked orange mixture aside.
  3. Gently warm a 1/2 cup rum in a heatproof bowl set in a pan of hot water.
  4. In a large saucepan, combine 4 cups peeled and sliced peaches, 1 cup crushed pineapple, 1 cup pitted and chopped cherries, and 2 tablespoons lime juice.
  5. Add the reserved orange mixture, 4 cups sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, and 1/4 teaspoon ground nutmeg. Stir until the sugar dissolves completely.
  6. Bring the mixture to a boil over medium heat, stirring frequently. Reduce the heat and simmer, stirring frequently to prevent sticking, until the conserve reaches the gelling point (the mixture will sheet off a spoon).
  7. Remove from heat and stir in the warmed rum.
  8. Ladle the hot conserve into sterilized half-pint jars, leaving 1/4-inch headspace.
  9. Adjust two-piece lids and process in a boiling water bath for 15 minutes.
  10. Carefully remove the jars from the boiling water bath. Cover with a dry towel and let stand until the jars seal and cool completely.
