Ingredients for Apricot Amaretto Jam
- Dried Apricots
- 1/2 cup water
- Orange Rind
- Fresh Orange Juice
- Fresh Lemon Juice
- 1kg granulated sugar
- Slivered Almonds
- Amaretto
How to Make Apricot Amaretto Jam
- Place 1kg ripe apricots and 1/2 cup water in a medium bowl, cover, and let stand overnight to soften.
- Combine the apricot mixture and the zest of 1 orange (finely grated) in a large saucepan.
- Bring the mixture to a rolling boil over medium-high heat.
- Reduce heat to low and simmer uncovered for about 10-15 minutes, or until the apricots are very soft and easily mashed.
- Add 1/4 cup orange juice, 1/2 cup lemon juice, and 1kg granulated sugar.
- Stir over medium heat until the sugar completely dissolves. Do not let it boil at this stage.
- Bring to a rolling boil, uncovered, and stir occasionally for about 30-40 minutes, or until the jam reaches setting point (a small amount placed on a chilled plate wrinkles when pushed with a finger).
- Remove from heat and stir in 1/4 cup slivered almonds and 2 tablespoons of Amaretto liqueur.
- Carefully pour the hot jam into hot, sterilized jars, leaving 1/4 inch headspace. Seal immediately while hot and process in a boiling water bath for 10 minutes to ensure proper sealing (optional, but recommended for long-term storage).
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
