  • 1/2 cup water
  • Orange Rind
  • Fresh Orange Juice
  • Fresh Lemon Juice
  • 1kg granulated sugar
  • Slivered Almonds
  • Amaretto

How to Make Apricot Amaretto Jam

  1. Place 1kg ripe apricots and 1/2 cup water in a medium bowl, cover, and let stand overnight to soften.
  2. Combine the apricot mixture and the zest of 1 orange (finely grated) in a large saucepan.
  3. Bring the mixture to a rolling boil over medium-high heat.
  4. Reduce heat to low and simmer uncovered for about 10-15 minutes, or until the apricots are very soft and easily mashed.
  5. Add 1/4 cup orange juice, 1/2 cup lemon juice, and 1kg granulated sugar.
  6. Stir over medium heat until the sugar completely dissolves. Do not let it boil at this stage.
  7. Bring to a rolling boil, uncovered, and stir occasionally for about 30-40 minutes, or until the jam reaches setting point (a small amount placed on a chilled plate wrinkles when pushed with a finger).
  8. Remove from heat and stir in 1/4 cup slivered almonds and 2 tablespoons of Amaretto liqueur.
  9. Carefully pour the hot jam into hot, sterilized jars, leaving 1/4 inch headspace. Seal immediately while hot and process in a boiling water bath for 10 minutes to ensure proper sealing (optional, but recommended for long-term storage).
