How to Make Pear Relish

  1. In a large bowl, combine the diced pears, chopped onion, apple cider vinegar, brown sugar, granulated sugar, salt, cinnamon, cloves, and ginger.
  2. Gently stir to ensure all ingredients are well combined. Let the mixture stand at room temperature for 1 hour to allow the pears to release their juices.
  3. After 1 hour, transfer the mixture to a colander set over a large bowl. Drain well, pressing gently to remove as much liquid as possible. Discard the liquid.
  4. Transfer the drained pear mixture to a large, heavy-bottomed saucepan.
  5. Bring the mixture to a rolling boil over medium-high heat, stirring frequently to prevent sticking.
  6. Once boiling, reduce the heat to low, and simmer gently for 15 minutes, stirring occasionally, until the relish has thickened slightly.
  7. While the relish simmers, prepare your canning jars by sterilizing them in boiling water for 10 minutes. Keep the jars hot.
  8. Carefully spoon the hot pear relish into the hot, sterilized jars, leaving 1/8 inch headspace at the top of each jar.
  9. Wipe the rims of the jars clean with a damp cloth.
  10. Place the lids and rings on the jars, tightening them fingertip tight.
  11. Process the filled jars in a boiling water bath for 10 minutes, ensuring the jars are completely submerged in boiling water. Add more hot water if necessary.
  12. Carefully remove the jars from the boiling water bath and allow them to cool completely on a towel. You should hear a “pop” sound as the jars seal. Check the seals to make sure the jars are properly sealed before storing.
