How to Make Penne Surpreme

  1. Cook penne pasta according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large Dutch oven or frying pan over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  3. Add minced garlic and bell pepper; cook for 1-2 minutes more.
  4. Crumble Italian sausage into the pan and cook, breaking it up with a spoon, until no longer pink (about 8-10 minutes).
  5. Add sliced mushrooms and cook until softened, about 5 minutes.
  6. Stir in sliced black olives.
  7. Pour in crushed plum tomatoes and pasta sauce. Add Italian herbs.
  8. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  9. Add the cooked penne pasta to the sauce and stir to combine.
  10. Preheat oven to 350°F (175°C).
  11. Grease a large casserole dish.
  12. Pour half of the pasta mixture into the prepared casserole dish.
  13. Sprinkle half of the mozzarella and Parmesan cheese over the pasta.
  14. Add the remaining pasta mixture and top with the remaining cheese.
  15. (Optional) Sprinkle extra Italian herbs over the cheese.
  16. Bake for 30 minutes, or until heated through and bubbly and the cheese is melted and golden brown.
