How to Make Pig Lickin Cake

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, combine cake mix, oil, eggs, and orange juice. Mix on medium speed with an electric mixer for 2 minutes.
  3. Divide batter evenly among the prepared cake pans.
  4. Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  5. Let cakes cool in pans for 10 minutes before inverting onto wire racks to cool completely.
  6. While cakes cool, prepare the filling: In a medium bowl, whisk together the reserved pineapple juice and instant pudding mix until smooth. Let stand for 2 minutes to thicken.
  7. Gently fold in the thawed Cool Whip and drained pineapple chunks.
  8. Once cakes are completely cool, frost the top of one layer with a generous amount of the pineapple filling. Top with the second cake layer and repeat. Frost the top and sides of the final layer with the remaining filling.
  9. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
