How to Make Quinoa Loaf With Mushrooms And Peas
- Preheat oven to 350°F (175°C). Lightly grease an 8x4 inch loaf pan with olive oil.
- Cook quinoa according to package directions. Set aside to cool slightly.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced mushrooms and chopped onion. Cook, stirring occasionally, until mushrooms are golden brown (6-8 minutes). Season with salt and pepper.
