How to Make Quinoa Loaf With Mushrooms And Peas

  1. Preheat oven to 350°F (175°C). Lightly grease an 8x4 inch loaf pan with olive oil.
  2. Cook quinoa according to package directions. Set aside to cool slightly.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced mushrooms and chopped onion. Cook, stirring occasionally, until mushrooms are golden brown (6-8 minutes). Season with salt and pepper.
  4. While mushrooms cook, combine cannellini beans, rolled oats, and 1/2 cup water in a food processor. Pulse until almost smooth.
  5. In a large bowl, combine cooked quinoa, sauteed mushrooms and onions, bean mixture, frozen peas, chopped parsley, sun-dried tomatoes, salt, and pepper. Mix well.
  6. Transfer the mixture to the prepared loaf pan, gently pressing down and mounding it slightly in the center.
  7. Bake for 55-65 minutes, or until firm and golden brown. A toothpick inserted in the center should come out clean.
  8. Let the loaf rest for 10 minutes before slicing and serving. Enjoy!
