How to Make Rhubarb Citrus Punch
- Combine 1 pound chopped rhubarb and 2 cups of water in a large saucepan. Bring to a simmer over medium heat.
- Simmer for 15-20 minutes, or until the rhubarb is completely softened.
- Remove from heat and let cool slightly.
- Strain the rhubarb mixture through a fine-mesh sieve or cheesecloth, pressing on the solids to extract as much juice as possible. Measure 4 cups of the rhubarb juice.
- Return 4 cups of the strained rhubarb juice to the saucepan. Add 1 cup of granulated sugar and stir until combined.
- Heat over medium heat, stirring constantly, until the sugar is completely dissolved.
- Remove from heat and let cool completely. Refrigerate for at least 2 hours to chill thoroughly.
- Once chilled, stir in 1 cup orange juice and 1/2 cup lemon juice.
- Just before serving, gently stir in 4 cups of chilled ginger ale and 1 cup of sliced strawberries (if desired).
- Pour over ice and enjoy!
