How to Make Roasted Garlic Pate
- Preheat oven to 300°F (150°C).
- Wrap each head of garlic (about 2 large heads) in double-thickness aluminum foil.
- Place the wrapped garlic heads on a baking sheet and bake for 40-45 minutes, or until the garlic is very soft and easily squeezed.
- Remove from oven and let cool completely for about 15 minutes until cool enough to handle.
- Remove foil and gently squeeze each clove to remove it from its skin.
- Place the roasted garlic cloves in the bowl of a food processor.
- Add 4 ounces (113g) of softened cream cheese and 1/4 teaspoon of freshly ground black pepper.
- Process for 30 seconds until smooth.
- With the food processor running, slowly drizzle in 1/4 cup (60ml) of extra virgin olive oil until the mixture reaches the desired creamy consistency, similar to softly whipped potatoes.
- Taste and adjust seasoning as needed. You can add a pinch of salt if desired.
- Serve immediately or chill for later. Enjoy!
