How to Make Roasted Garlic Pearl Onions With Herbs

  1. Preheat oven to 375°F (190°C).
  2. Cut the pointed end off of 1 whole head of garlic and 1 pound of pearl onions.
  3. Drizzle 2 tablespoons of olive oil over the garlic and onions. Sprinkle with 1 teaspoon of dried thyme, 1/2 teaspoon of dried rosemary, and salt and pepper to taste.
  4. Wrap the garlic and onions in aluminum foil, leaving the top slightly open, or place them in a heavy-bottomed oven-safe pan.
  5. Roast for 1 hour.
  6. After 30 minutes, carefully baste the garlic and onions with the oil from the bottom of the pan.
  7. Remove from the oven and let cool slightly.
  8. (Optional) Remove garlic cloves and pearl onions from their skins. You can freeze them at this stage or proceed to step 9.
  9. (Optional) In the roasting pan, add 1/4 cup of olive oil and simmer gently, scraping up any browned bits from the bottom of the pan.
  10. (Optional) Cool the infused olive oil, then pour it over the roasted garlic and onions. Refrigerate for future use.
  11. (Optional) Mash some of the roasted garlic and onions and add them to homemade dressings.
  12. (Optional) Toss into day-old bread cubes for flavorful croutons.
  13. (Optional) Spread on fresh, crusty bread.
  14. Serve and enjoy! Try them on your favorite dishes – they're especially delicious with mashed potatoes!
