How to Make Roasted Garlic Pearl Onions With Herbs
- Preheat oven to 375°F (190°C).
- Cut the pointed end off of 1 whole head of garlic and 1 pound of pearl onions.
- Drizzle 2 tablespoons of olive oil over the garlic and onions. Sprinkle with 1 teaspoon of dried thyme, 1/2 teaspoon of dried rosemary, and salt and pepper to taste.
- Wrap the garlic and onions in aluminum foil, leaving the top slightly open, or place them in a heavy-bottomed oven-safe pan.
- Roast for 1 hour.
- After 30 minutes, carefully baste the garlic and onions with the oil from the bottom of the pan.
- Remove from the oven and let cool slightly.
- (Optional) Remove garlic cloves and pearl onions from their skins. You can freeze them at this stage or proceed to step 9.
- (Optional) In the roasting pan, add 1/4 cup of olive oil and simmer gently, scraping up any browned bits from the bottom of the pan.
- (Optional) Cool the infused olive oil, then pour it over the roasted garlic and onions. Refrigerate for future use.
- (Optional) Mash some of the roasted garlic and onions and add them to homemade dressings.
- (Optional) Toss into day-old bread cubes for flavorful croutons.
- (Optional) Spread on fresh, crusty bread.
- Serve and enjoy! Try them on your favorite dishes – they're especially delicious with mashed potatoes!
