  • 3 quarts water + 4 cups for soaking

  • 1 pound boneless pork shoulder, cubed

How to Make Rter Med Flsk Pea Soup With Pork

  1. Rinse 1 cup dried split peas and soak in 4 cups cold water overnight.
  2. Drain the soaked peas and place them in a large pot or Dutch oven. Add 3 quarts of fresh water.
  3. Bring to a boil over high heat. Once boiling, reduce heat to medium-low, partially cover, and simmer for 1 hour, skimming off any foam or skins that rise to the surface.
  4. Add 1 pound boneless pork shoulder (cubed), 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 bay leaf. Reduce heat to low, cover, and simmer for another 2 hours, or until the pork is very tender.
  5. Add 1/2 cup chopped carrots, 1/2 cup chopped celery, and 1/4 cup chopped onion. Continue to simmer for 30 minutes to allow the vegetables to soften.
  6. Season to taste with additional salt and pepper. You may also add a pinch of caraway seeds or other herbs for added depth of flavor.
