How to Make Rumtopf
- Sterilize a large, non-reactive crock (at least 5 liters).
- Layer 1 cup of sugar in the bottom of the crock.
- Add a layer of 1 kg of your first type of fruit (e.g., strawberries, halved).
- Pour over 1 cup of dark rum.
- Repeat layers of sugar, fruit, and rum until your crock is nearly full. Ensure the top layer is fruit, and you are using different fruits each layer.
- Leave at least 2 inches of space at the top of the crock.
- Cover the crock tightly and store it in a cool, dark place.
- Add new fruit every 2-3 days, as it ripens, to maintain at least 2 inches of headspace. Each time, add a layer of sugar and rum as needed.
- After roughly 8 weeks (or longer!), check for fermentation bubbles. The fermentation indicates success!
- Refrigerate the Rumtopf for at least 24 hours (Prep Time).
- Serve chilled. Enjoy this delectable fruit preserve over ice cream, yogurt, or on its own!
