How to Make Rumtopf

  1. Sterilize a large, non-reactive crock (at least 5 liters).
  2. Layer 1 cup of sugar in the bottom of the crock.
  3. Add a layer of 1 kg of your first type of fruit (e.g., strawberries, halved).
  4. Pour over 1 cup of dark rum.
  5. Repeat layers of sugar, fruit, and rum until your crock is nearly full. Ensure the top layer is fruit, and you are using different fruits each layer.
  6. Leave at least 2 inches of space at the top of the crock.
  7. Cover the crock tightly and store it in a cool, dark place.
  8. Add new fruit every 2-3 days, as it ripens, to maintain at least 2 inches of headspace. Each time, add a layer of sugar and rum as needed.
  9. After roughly 8 weeks (or longer!), check for fermentation bubbles. The fermentation indicates success!
  10. Refrigerate the Rumtopf for at least 24 hours (Prep Time).
  11. Serve chilled. Enjoy this delectable fruit preserve over ice cream, yogurt, or on its own!
