How to Make Russian Iced Tea

  1. In a medium saucepan, combine 1 cup of granulated sugar and 3 cinnamon sticks with 1 quart (4 cups) of water. Bring to a boil over medium heat.
  2. Reduce heat and simmer for 20 minutes, allowing the cinnamon to infuse the syrup.
  3. While the syrup simmers, zest 2 large oranges and 1 large lemon. Set the zest aside.

  6. Remove from heat and strain the syrup through a fine-mesh sieve into a large pitcher, discarding the solids.
  7. In a separate heat-proof container, steep 8 black tea bags in 2 cups of boiling water for 5-7 minutes (or according to package directions).
  8. Remove the tea bags and let the tea cool completely.
  9. Once cooled, combine the cooled tea, the strained fruit syrup, and 2 quarts (8 cups) of cold water in the pitcher. Stir well to combine.
  10. Refrigerate for at least 2 hours to allow flavors to meld. Serve over ice.
